My brother brought me a traditional stoneware vinegar jar with a bit of mother, all from France. So I went to my local WholeFoods and got this Pinot to make my own vinegar. I was so surprised by the superiority of this great wine. Because the taste is so so lively and rich where you can subtly taste the grape but also light and smooth that it intimated instantly of what the wines of antiquity could have been like (before the wine barrons put themselves in charge). So I drank half of the bottle and made with the rest a vinegar that's the best I've had in ages.
